I have a straight drawknife (bought off amazon), which has been quite useful in the past when I have needed to reduce toe thickness and/or blend the spine into the toe. I would just chop off the unnecessary spine/toe and then smooth it out with an orbital sander.

now, I have a bat that feels a tad heavy, and I just wanted to trim the edges down towards the toe. would the above approach work? I.e. I take the straight draw knife to the edges, and then smooth out the resulting kink with sandpaper?

You could but you are at risk of removing to much wood or having  edges of different shapes and  thickness

Personally I would recommend a curved spokeshave if you have a concaved bat. These are probably more easily available than a curved hand plane. It may take you longer to reduce the weight but it will give you a much more controlled and easy to sand finish!

I'm pretty clumsy with a drawknife, I definitely find it easier to use a plane of some description to reduce edges. Also, you should draw your new edges on both sides with a template first, otherwise they'll quickly look uneven. Best of luck!
