I believe offset edges are when the thickest part of the edge is in a different place to where the highest part of the spine is.

Not quite,

I believe its where the biggest part of the edge is slightly 'offset' from the biggest part of the spine of the bat.

I have no idea what that does in terms of performance, but I take it to be a good thing.
